Cherry Pie Cupcakes and Vanilla Swiss Buttercream

Howdy Loves!!
I've been digging baking things in cakes for awhile, but everything changed when I found the bake it in a cake website.  Pies in cupcakes...what kind of magic is this, you may ask.  Easy magic!!  Possibilities are endless and oh so tastey!!

Cherry Pie Cupcakes
Adapted from Bake it in a Cake
Makes about 22-24 cupcakes.
For the blueberry pies you’ll need:
2 packages of refrigerated pie dough (enough for one two crust pie)
1 can cherry pie filling
For the cupcakes you’ll need:
1 1/2 sticks unsalted butter
1 1/2 c. granulated sugar
3 eggs
2 t. baking powder
1/2 t. baking soda
1/4 t. salt
2 t. vanilla
2 1/2 c. flour
1 1/3 c. whole milk

Directions: 
Pre-heat the oven to 375 degrees (F).
Roll out the pie dough and use a round cookie cutter (or small juice glass) to cut out 20-22 pie crust rounds that are large enough to fit into your mini cupcake tin, so the bottom and sides of the tin are fully covered. Spoon a teaspoon or so of cherry filling into each pie shell. Cut out 20-22 more pie crust rounds and place them on top of each mini pie, pinching the edges of the bottom crust and the top crust together so they’re sealed. Use a sharp knife to cut a small X into the top of each pie, and bake for 12-15 minutes until the crusts are golden brown (the pie filling might escape a bit—that’s okay!).
Allow the pies to cool while you make the cupcake batter.
Turn down the oven to 350 degrees (F).
Cream together the butter and sugar until fluffy. Add the eggs, one at a time, and stir until combined. Then add the baking soda, baking powder, vanilla, and salt. Mix for about a minute, until creamy (be sure to scrape down the sides of the bowl once or twice, to ensure everything is getting worked in). Then add the milk and flour, alternating between the two ingredients (to avoid lumps) until the batter is smooth and everything is well combined.
Scoop a heaping tablespoon of batter into your paper-lined cupcake tins. Place one cooled pie into the center of the cupcake tin and gently press it into the batter (but not all the way to the bottom). Top with another heaping tablespoon of batter, so that the pie is completely covered and the cupcake tins are about 3/4 of the way full.
Bake for about 22-25 minutes, until the cake is golden brown and set (it will bounce back when you gently press your finger into a cupcake).
Allow the cupcakes to cool, while you make the buttercream.



Vanilla Swiss Meringue Buttercream
from Annies Eats

Ingredients:
5 large egg whites
1 cup plus 2 tbsp. sugar
Pinch of salt
1 lb. (4 sticks) unsalted butter, at room temperature
2 tsp. vanilla extract
Directions:
To make the frosting, combine the egg whites, sugar and salt in a heatproof bowl set over a pot of simmering water.  Heat, whisking frequently, until the mixture reaches 160° F and the sugar has dissolved.
Transfer the mixture to the bowl of a stand mixer fitted with the whisk attachment.  Beat on medium-high speed until stiff peaks form and the mixture has cooled to room temperature, about 8 minutes.
Reduce the speed to medium and add the butter, 2 tablespoons at a time, adding more once each addition has been incorporated.  If the frosting looks soupy or curdled, continue to beat on medium-high speed until thick and smooth again, about 3-5 minutes more (don’t worry, it will come together!)  Stir in the vanilla extract and mix just until incorporated.  Tint with gel icing color as desired.
Keep buttercream at room temperature if using the same day, or transfer to an airtight container and refrigerate up to 3 days or freeze up to 1 month. Before using, bring to room temperature and beat with paddle attachment on low speed until smooth again, about 5 minutes.

I really liked these however next time I would leave the top crust off the pie and add more filling.  Also check the cupcakes after 10mins they bake quickly.

Did Someone Say Treasure??

Howdy My Loves!
So I've been promising my famous hidden treasures and TA DA here they are!!
These are buttery and soft...and stuffed with cherries...and dipped in milk chocolate.  Did your taste buds explode?  Good!  The first time I made these it took me nearly an entire day but I've made them the last 6+ years for the holidays so it is safe to say I've made hundreds of these.  They get quicker with practice.  My father having a sweet tooth like me frequently eats treats right out of the oven; and because of this we have discovered the undipped cookies fresh out of the oven are JUST as good as the dipped ones.  I recently read a similar recipe using caramels and instead of dipping in chocolate dusting with powdered sugar.  Definitely going to have to explore that this year. Anyways, without further ado...

Hidden Treasures
Crisco Cookie Collection 1989

Cookies
2/3 C Butter Flavor Crisco
3/4 C Sugar
1 Egg
1 Tbsp Milk
1 Tsp Vanilla
1 3/4 C AP Flour
1 Tsp Baking Powder
1/2 Tsp Salt
1/2 Tsp Baking Soda
48 Maraschino cherries, well drained on paper towels

Chocolate for Dipping
2 C Semi Sweet Chocolate Chips (I use Milk Chocolate)
2 Tbsp Butter Flavor Crisco

Preparation
  1. Heat oven to 350 F. (My oven is a little hotter so I set it on 345F)
  2. Cream Crisco, sugar, egg, milk, and vanilla in large bowl at medium speed of electric mixer until well blended.
  3. Combine flour, baking powder, salt, and baking soda.  Beat into creamed mixture at low speed.
  4. Press dough in very thin layer around well drained cherries. (I use a small cookie scoop and it is the perfect size.  Also, have a small bowl of flour out to keep on your hands.  Helps the dough stop from sticking.  Once you have scooped the dough out place it in the palm of your hand and use 2 fingers from your other hand to flatten it.  Then cover cherry and roll into a ball).  Place 2 inches apart on ungreased baking sheet.
  5. Bake for 10 mins.  (For super soft cookies bake 10-11 minutes for more done cookies leave in 12-14 minutes).  Cool one minute on baking sheet.  Remove to cooling rack.  Cool completely.
  6. For Dipping Chocolate, melt chocolate and crisco on very low heat or 50% power in Microwave. Stir.
  7. Tranfers chocolate to glass measuring cup.  Drop one cookie at a time into chocolate.  Use fork to turn.  Cover completely with chocolate.  Lift cookie out of chocolate on fork.  Allow all excess to drip off.  Place on wax paper-lined baking sheet.
The book also recommends white chocolate which we didn't care for and different toppings to sprinkle on.  You can try white chocolate shavings, chopped pecans, chopped walnuts, sprinkles, sanding sugar, or caramel drizzles.

Cherries: Maraschino v. Fresh a New kind of Challenge

So I got back to some baking yesterday and went through tons of recipes to pick out my favorite.  I really wanted to make cherry vanilla cupcakes and found so many good recipes.  I decided to try both maraschino and fresh cherry versions and see which I like better; then I thought it would be a fun addition to the blog to do a challenge a couple of times a month (I'd like to do it weekly but lets face it life gets in the way sometimes).

Cherry Almond Vanilla Cupcakes Recipe I used here

ingredients

1/2 cup butter (I used a cup of butter)
4 egg whites
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup buttermilk
1/3 cup maraschino cherry juice
1-1/2 cups sugar
1 teaspoon vanilla
1/2 teaspoon almond extract
12 maraschino cherries, halved (I used several cherries chopped up)
 1 recipe Cherry-Almond Butter Frosting
 Maraschino cherries with stems (optional)

Directions
1. Allow butter and egg whites to stand at room temperature for 30 minutes. Meanwhile, line twenty-four 2-1/2-inch muffin cups with paper bake cups (or coat with cooking spray). In a medium bowl stir together flour, baking powder, salt, and baking soda. In a 2-cup glass measuring cup combine buttermilk and cherry juice; set aside.

2. Preheat oven to 350 degrees F. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, vanilla, and almond extract; beat until combined. Add egg whites, one at a time, beating well after each addition. Alternately add flour mixture and buttermilk mixture to beaten mixture, beating on low speed after each addition just until combined.





3. Spoon batter into prepared muffin cups, filling each about two-thirds full. Use the back of a spoon to smooth out batter in cups. Press a cherry half into batter in each cup.(Or add chopped cherries)







4. Bake for 15 to 18 minutes or until tops spring back when lightly touched. Cool cupcakes in muffin cups on wire racks for 5 minutes. Remove cupcakes from muffin cups. Cool completely on wire racks.






5. Using a pastry bag fitted with a large star tip, pipe Cherry-Almond Butter Frosting over tops of cupcakes. If desired, top with cherries. Makes 24 (2-1/2-inch) cupcakes.





Cherry-Almond Butter Frosting: Allow 1/2 cup butter to stand at room temperature for 30 minutes. In a large mixing bowl beat butter with an electric mixer on medium speed until smooth. Gradually add 1 cup powdered sugar, beating well. Beat in 3 tablespoons maraschino cherry juice or milk and 1/2 teaspoon almond extract. Gradually beat in 3 cups additional powdered sugar. If necessary, beat in additional juice or milk, 1 teaspoon at a time, until frosting reaches a spreading consistency. Makes 2 cups frosting.







Cherry Vanilla Cupcakes Recipe I used here

Cupcakes
22-24 regular cupcakes / 375-350 degree oven

1 cup (2 sticks) unsalted butter, room temperature
2 cups sugar
4 large eggs
2-3/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1/8 teaspoon salt
1 cup milk
2 teaspoons vanilla
1. Beat butter on high until soft, about 30 seconds.
2. Add sugar. Beat on medium-high until light and fluffy, about 3 minutes.
3. Add eggs one at a time, beat for 30 seconds between each.
4. Whisk together flour, baking powder, and salt in a bowl. Add to mixer bowl. Add the milk and vanilla. Mix to combine.
5. Scoop into cupcake papers about half to two-thirds full (depending on whether you want flat or domed cupcakes).
6. Bake for 22-25 minutes until a cake tester comes out clean. (I put them in for 20mins and they were over done. Check by 18 mins.)

Cherry Filling
2 cups cherries, pitted, fresh or frozen
1/2 cup water
1 teaspoon vanilla
1/2 cup sugar
2 tablespoons cornstarch
1. Add cherries, water, and vanilla to a pot. Cook for 10 minutes over medium-high heat.
2. Stir together sugar and cornstarch then stir into the cherries.
3. Cook until thick, about 20 minutes.

I took pictures of the process but I was honestly so disappointed in the cupcake its a waste of upload.  I did love the filling though!

In this challenge maraschino won!
